To say that there can be only one infinite thing is to say that the existence of one infinite thing prohibits even finite things from existing concurrently; when a thing fills all space, there's no room for anything else.
I've never considered the universe to be without boundaries. New discoveries at the quantum level suggest that the universe is both finite, and one of countless universes within the multiverse.
Regardless what the universe is, your arbitrary 'theory' that a deity must be the alternative to whatever you don't understand isn't backed by any actual evidence.
