I capitalise Hebrew and Israelite. Jew is more of a shorthand for judaist [which oddly fails to be a real word] as a member of judaism. I don't bother capitalising religions. If I bothered capitalising jew and christworshipper, I'd have to capitalise novelist and palaeontologist, too. They're just gigs, not really nationalities.
