You can't really worry too much about the FanFic elements here. Granted, the pubished spinoff novels are authorised, but that doesn't really mean much.
Look at Marvel's Star Wars #68: Fett was a supercommando, like Fenn Shysha. That whole thing has been abandoned.
The cartoon introducing Fett in 1978 [speaking of mistakes designed for kids] has also been abandoned.
The FanFic stuff may have been Lucas' biggest mistake. He wanted to make money off of other people's efforts, but he didn't want them altering the story as it was already written. So anything authorised is considered valid.
I haven't really read much of the FanFic personally. I've read the stuff from the eighties--which is how I initially worked out that FanFic is usually a bad idea. And I read Zahn's trilogy in the nineties. I haven't bothered with a lot of the more recent stuff.
One good example, though, is the future of the Solo family. Apparently, there are differing accounts of that. In one version, Han and Leia had twins again; in another, they had a single kid and named him Anakin. That sort of thing--authorised by Lucas--suggests that the FanFic stuff has nothing to do with the films.
Also: Lucas has lied about a couple of things regarding Fett. Three years ago, he claimed that Fett was in Menace, and that it was the last guy you'd expect him to be. In a month, it's going to be clear that Fett was nowhere near Menace.
As for Fett's identity, there are a lot of spoilers there. If you really want to know in advance, highlight the rest:
Fett, first of all, is one of the first generation of the rebellion. Attack of the Clones is setting things up to slowly turn the Republic into the Empire. Dooku is already predicting that, so he's building an army against the forthcoming threat. The army of clones are based on the genetic template of Jango Fett: a bounty hunter who was considered the perfect genome for the purpose. Fett's major stipulation in the deal was that he got his own personal clone--Boba. In the case of the clonetroopers, the intelligence was diminished; Dooku wanted the clones to have Fett's stamina, but to remain controllable. Boba Fett was unaltered, and is a perfect copy of Jango. Jango also insisted that Boba's growthrate was left alone. The clonetroopers are adults at ten years old; Boba is identical to a ten-year-old Jango. Whether Boba will be accelerated in Episode Three, or whether there's a second, accelerated Boba hidden somewhere, is something I've considered, but haven't determined yet. By the end of Clones, Jango is killed by the jedi army. Boba picks up his helmet and walks away.
That all conflicts with a number of FanFic sources. But, unless something changes drastically in the next three weeks, that's the story as of Episode Two.
