For one thing, you're cutting through the carotid, I may not be a doctor, but I'm fairly certain that there's quite a bit of blood going through there at a reasonably high pressure. A least a little spurting should occur, maybe the equivalent of squeezing a balloon full of water upward.
Second, you're cutting through the spinal column. Two problems with this, first, as already mentioned, shouldn't it be just a bit difficult to cut through some of the thicker bones in the body? Second, unless I'm mistaken, there are quite a few nerves there. Maybe I watch too many horror movies, but shouldn't something be twitching when you cut through what is pretty much the hub of the nerve highway?
